Chop chicken breasts into small thin pieces. In a medium bowl mix together olive oil, garlic, chili, cajun, and salt. Toss chicken to coat completely. Cover and refrigerate for 10 minutes up to 24 hours.
Heat frying pan on high for 1 minute. Add the olive oil and chicken. Cook chicken over medium heat until charred and cooked through, 10-15 minutes.
Cilantro Lime Sauce
Add the sour cream, cilantro, garlic, lime juice and salt & pepper to blender or food processor. Blend until creamy. (30 seconds to a minute)
Add shredded lettuce on bottom, add chicken, add avocado and top with cilantro sauce. If you really love cilantro add a few fresh leaves on top.
