Some days you just need quick and simple dinner recipes. This five Ingredient pasta is sure to be one that will be used over and over. The flavour from the caramelized onions paired with the Goat cheese is unbelievably tasty!
For this recipe, we used a herbed goat cheese which added some extra flavour. You could however use plain goat cheese, or if you are feeling adventurous try using blueberry goat cheese!
Warm butter in a frying pan over medium heat and add onions. Sauté for 10 mins or until beginning to brown. Add 1/2 tsp of salt, lower heat and cook for 15-20 mins until onions are soft and caramelized.
While onions are caramelizing, bring a pot of water to boil with a pinch of salt. Cook fettuccine for 10-12 mins. Drain pasta and return to pot.
While pasta is cooking, add kale into the onions and cover the skillet. Cook for another 6-8 mins or until kale is tender, stirring a few times. Add onion and kale mixtures, 3/4 of the goat cheese and black pepper to the cooked pasta. Toss well.
Top the pasta with crumbled remaining goat cheese.
**You could also some protein to the pasta by adding cooked chicken or adding in cooked bacon crumble.
