Lemon Balm & Lime Popsicles

The summer heat is here to stay and today we’re chillin’ out with our delicious Lemon Balm and Lime Popsicles. Lemon Balm is a #nullam favourite as it grows incredibly fast in our #nuGardens AND it has amazing health benefits. Lemon balm plays a role in optimizing immune as well as digestive health and providing a sense of balance for the nervous system. In the digestive system, lemon balm has historically been used to calm occasional discomfort associated with indigestion and bloating. #signusup!

Instructions
  1. Combine all ingredients in a medium saucepan. Over medium – high heat bring mixture to a boil while stirring, until sugar is dissolved. Remove from heat and set aside to cool.
  2. Thinly slice the remaining 1/4 cup of lemon balm leaves.
  3. Strain the cooled sugar mixture and add the sliced lemon balm.
  4. Pour into the popsicle molds and allow to freeze 4-8 hours.
Ingredients

3/4 Cup Lemon Balm leaves, packed

2 Cups Water

2/3 Cups Sugar

4 (1-inch thick) Strips lime zest/peel

1/2 Cup Fresh Lime Juice

**1/4 Cup Lemon Balm leaves, save for fresh garish of popsicles
